This cocoa is handcrafted in Italy's Piedmont region by Elena Boella and Stefano Silvola of Boella & Sorrisi, artisans whose family chocolate-making heritage dates back to 1885. The cocoa is hydraulically pressed to separate the cocoa butter from the solids, then finely ground into a smooth, deep-flavoured powder.
